The Cheat Emperor of the Culinary World

The music restaurant has special cookware for making braised pork knuckles and similar dishes.

After all, the quantity is too large to be cooked in an ordinary iron pot.

Moreover, the marinade is pre-prepared, with a certain ratio for a certain amount of braised meat, to ensure a consistent flavor.

However, what Fu Yu was preparing was deep-fried pork knuckles, so there was no need to use the marinade for the time being.

Deep-fried pork knuckles take a long time to cook, and doing it on a liquefied gas burner takes too much time, so he instructed the kitchen helper to set a large marinade pot directly on a twelve-headed high flame stove.

Once the pork knuckles were cleaned, they were placed into the marinade pot, and cold water was added to start cooking.

During this process, Fu Yu didn’t rely on anyone else’s help; he did it all by himself.

Because only in this way could he control the heat comfortably.

The kitchen helper handed the pork knuckles to Fu Yu, and a 50-sized marinade pot could easily hold sixteen pork knuckles.

Fu Yu adjusted the flame to its maximum.

After the water boiled, the water in the marinade pot needed to be poured out.

This full marinade pot, just pure water weighed eighty to ninety kilograms, plus fifty kilograms of pork knuckles, totaled over a hundred kilograms.

To pour out the water from the marinade pot, usually, the pork knuckles are scooped out first, and then the water is ladled out from the marinade pot.

The kitchen helper brought over a wicker basket, iron hook, and meat claws, preparing to scoop out the pork knuckles.

However, when he had gathered all the items and came over, he was astonished to see Fu Yu directly put on gloves, pressed down the lid with his thumb, and lifted the marinade pot with just his strength.

To prevent splashing, Fu Yu deliberately put the marinade pot on the ground, only then did he pour out the water completely.

Kitchen helper: ”!”

Wow!

Such arm strength!

If he were to uproot a willow tree, it would probably be like pulling scallions from a vegetable garden!

After emptying the water from the marinade pot, they refilled it with cold water.

The kitchen helper, while filling the pot with water, sincerely praised, ”Chef Fu, you must work out regularly, don’t you? That arm strength is incredible!”

Fu Yu thought of the times he had been bullied by people and replied, lost for words, ”You could say that.”

With such strength, his arms must be full of muscles!

The kitchen helper stared enviously at Fu Yu’s slim but well-built physique, silently resolving to buy a set of dumbbells online when he got back.

As a chef, having strong arms is quite crucial.

The water in the marinade pot reached a boil again and was poured out.

Then, they refilled it with cold water and added ginger slices and yellow wine.

When the water boiled, they removed the floating impurities and continued simmering it over low heat.

Once the meat was 80% cooked, it was removed.

Into the pot, they poured enough oil to cover most of the pork knuckles and fried the cooked pork knuckles.

Only four pork knuckles could be fried in one pot. Fu Yu used an iron hook to place the pork knuckles in the oil while the kitchen helper quickly covered the pot with a lid.

After a short while, the sound of the oil splattering violently could be heard.

When the sound nearly ceased, they removed the lid and used a metal head to fish the pork knuckles out.

Once the oil temperature rose, they put the pork knuckles back in for another round of frying.

The most crucial step in preparing deep-fried pork knuckles is the frying.

Initially, when the oil temperature is low, fry for about five minutes.

Once the oil temperature rises, fry a second time.

This time it should be fried longer until the skin becomes golden and crispy before removing it from the pot and soaking it in cold water to make the skin wrinkle.

Stir fry the heart of the vegetables in the oil and add a suitable amount of salt, then arrange at the bottom of the plate for later use.

Once removed, place the pork knuckles in the pot.

Add broth, star anise, cinnamon, soy sauce, Sichuan pepper, bay leaves, and sugar.

Bring to a boil, then simmer over medium-low heat until the skin is tender.

Pick out the scallion, ginger, cinnamon, and star anise from the original sauce and bring to a boil.

Thicken with starch slurry, add pork fat and pour over the pork knuckles.

Since it’s for the elderly, it was cooked longer until both skin and meat were tender before taking it out and plating it.

Fu Yu repeated the cooking process four times for sixteen pork knuckles.

After he finished, the front hall had servers pushing a serving cart over to collect the dishes.

The medium-sized banquet hall on the second floor.

The 66 tables were almost full of guests as servers pushed the serving carts around, delivering dishes to each table.

On the stage in the middle, the host was passionately guiding the emotions of everyone present.

”Uncle, Auntie, you are aware of your own health! Your family hasn’t attended our classes and may not understand our brand’s products. But if something is good for your health, your family certainly wouldn’t object!”

”It’s safe to say that your children want their parents to be healthy. Moreover, if you miss today’s promotional offer, there won’t be as many benefits in the future.”

”Uncle, Auntie, don’t hesitate any longer; let’s first get you 10 boxes...”

The elderly sitting at the table closest to the stage were all dressed neatly, displaying a certain elegance in their behavior.

They seemed only in their early fifties, with the eldest not over sixty.

A table of ten, almost all were attentively listening to the host’s vigorous pitch.

Among them was an elderly lady in a black casual outfit, hair curled in an elderly style, wearing glasses, who leaned over to a companion next to her, who was focused on reaching for the food, and whispered, ”Mom! It’s almost time; you better stop eating! Our team is about to take action soon, by then I definitely won’t be able to take care of you!”

The elderly lady felicitously picked up a piece of pork knuckle and placed it on her plate in front of her.

This pork knuckle was excellently made!

The color was a bright red, and when poked open with chopsticks, the meat inside was tender and well-textured.

The dishes had been served promptly, so the pork knuckles were still hot.

When eaten warm, they were tender but not mushy.

Though they appeared oily, they were actually more lean than fat, not greasy at all upon consumption, with a delightful aroma, exuding a fragrant taste with a hint of sweetness.

”This pork knuckle is incredibly delicious! Just like the ones I used to have at banquets when I was young, known as deep-fried pork knuckles; it’s rare to find such authentic ones in restaurants today!”

The elderly lady picked up a piece of soft pork skin, enveloped with a piece of well-cooked pork, and handed it to her carefully disguised daughter beside her: ”Here, have a bite, you didn’t have breakfast in the morning, and might not have time to eat later, so while there’s still time, quickly have a little something.”

The undercover female police officer couldn’t resist her own mother’s urging and, not wanting to draw attention, quickly opened her mouth to catch the meat.

Her eyes remained firmly glued to the host on the stage, as well as the accomplices selling medicine nearby.

Quickly chewing the pork knuckle twice, just about to swallow, her movement paused.

The pork knuckle was fatty yet not greasy, the skin and fatty portion incredibly tender, the whole taste is rich with soy sauce fragrance, yet only carried a pleasant aroma, not at all greasy.

It truly was very delicious!

Unconsciously, she slowed her chewing to savor the taste of the pork knuckle.

One bite of pork knuckle swallowed, she inadvertently swallowed her saliva again.

Craving another bite.

As the saying goes, mother and daughter share a heart; as soon as the thought arose in her mind, her mom promptly handed another piece of pork knuckle to her mouth.

This time, she unhesitatingly took a big bite of the meat.

The elderly lady took a bite herself, then fed her daughter a bite.

While happily consuming the delicious deep-fried pork knuckles, the daughter kept her eyes on the stage.

Noticing the activity transitioning from promotion to sales phase, the female police officer’s earpiece rang, ”Group one, keep the exits secure. Group two, get on stage to assist with the sales activity. Group three, encircle and prepare to make arrests. Remember, try to minimize impact! Do not harm innocent civilians!”
