The Cheat Emperor of the Culinary World

Chapter 99: Chapter 98: Competition Mechanism

Seeing that no one had any objections.

Dong Jun Tian decided, ”Let’s do it this way then, but we still need to think carefully about the specific implementation. Yao Shi, during this time, you should prepare well and coordinate with everyone in the kitchen. Once we have a solid plan, we’ll start executing it.”

The boss had made the decision, so there wasn’t much a worker like Yao Shi could say.

However, since he had thought of something, he had to bring it up.

Might as well take advantage of the fact that the Wang brothers were present, so there would be someone to back him up.

Yao Shi understood Wang Jingrui well; he was generous and sensible in his dealings.

When Yao Shi first returned, he considered starting his own business, so he politely declined Wang Jingrui’s in-person invitation.

Someone else might have felt a bit uncomfortable about it.

But Wang Jingrui didn’t mind. The next time they met, things were as they should be, and over time they became friends.

”Alright, boss.” Yao Shi nodded, glanced at Wang Jingrui and Wang Xinnian, and then said, ”Just one thing, when taking orders, how should we allocate the size of the party?”

”Right now, no matter the size of the order, both Old Zhao and Lao Gu take the orders together. Since we plan to split this, should they choose the size of the party themselves, or should we alternate?”

Upon hearing this, Dong Jun Tian frowned immediately.

The size of the parties Qianlima takes orders for depends entirely on the customers’ moods.

There has never been a pre-booked party size.

It indeed seems complicated.

Yao Shi then turned to look at Wang Jingrui.

Compared to Dong Jun Tian who usually decided things independently, he found Wang Jingrui more approachable.

As expected, after considering it, Wang Jingrui said, ”I’m not quite sure how you manage the back kitchen, but in my place, we generally go by performance evaluation. The BBQ area, staple food area, Chinese food area, Western food area... I have divided several areas this way. After a month of business, the area’s foods that are more popular receive higher commissions.”

Upon hearing this, Dong Jun Tian’s eyes lit up!

Zhao Meng and Gu Yunwu in the kitchen are veterans of the store, so their cooking skills are not in question, but their work enthusiasm isn’t very high.

Dong Jun Tian couldn’t help asking, ”Jingrui, how do you set the performance evaluation?”

Wang Jingrui replied, ”Comparing service, comparing the taste of ingredients, everyone shows their skills! No matter how hard we work, by the end of the month, the area that performs well allows its staff to earn more commission. As long as there is money to be made, there’s no need for us to supervise them; they’ll be motivated on their own.”

Dong Jun Tian said, ”You know, this approach is pretty good!”

Yao Shi raised an eyebrow, ”Why not just directly split the orders into groups? When guests arrive, casual orders are assigned in sequence, while regular customers specify who they want to handle their orders.”

After a brief thought, Dong Jun Tian also found this feasible.

Once the evaluation system is implemented, Zhao Meng and Gu Yunwu, to earn more commission, would surely figure out ways to cook well and attract customers.

This way, not only is the work enthusiasm of the kitchen staff enhanced, but also the existing customer base is well-maintained.

Dong Jun Tian nodded, ”I think it’s good.”

Then he looked at Yao Shi, ”Yao Shi, don’t worry about procuring vegetables in the future. Leave that to Old Zhao and Lao Gu to decide themselves. The chef school will soon have many graduates; when recruiting new people, you’ll be responsible for their training.”

”By then, like Fu Yu and Yao Yihang, those who can handle cooking independently, they should each be paired with an assistant chef, and they’ll also be evaluated for commission based on their performance.”

Yao Shi was stunned!

Pairing Fu Yu and Yao Yihang with assistant chefs?

Are they serious about promoting head chefs?

...

Fu Yu got a new cooling mat, took it home and wiped it clean with a towel, then slept on it that night.

Lying on a bamboo mat was comfortable.

The next morning.

Fu Yu got ready and sent a message to Zhao Meng, asking him what he’d like for breakfast.

Breakfast in the kitchen was always made by whoever was available.

Zhao Meng quickly replied: [You go ahead. I’ve got something to do and will be there a bit late.]

Fu Yu was quite surprised by the message.

What could come up so early in the morning?

Old yet vigorous?

Too much beef jerky last night?

Fu Yu imagined, and strolled to the kitchen to make breakfast.

”Achoo!”

Zhao Meng rubbed his nose, and said in surprise, ”Performance evaluation... in the future, Lao Gu and I will have to figure out how to take orders on our own.”

What are they playing at?

Yao Shi hadn’t slept well last night, thinking about calling Zhao Meng, but worried it wouldn’t be clear over the phone, so he simply rushed over early to talk to Zhao Meng in person.

Yao Shi continued, ”In the future, you’ll have to keep in touch with the customers often. This part you don’t have to worry about; your skills are well-known, and many come for you. But for the assistants, you need to train them diligently. If there’s a chance, let them handle cooking duties. Without saying they need to take independent orders, they should at least be able to help out together when large orders come in. And of course, you should also pay more attention to Fu Yu.”

”I hope you guys don’t end up delaying orders because of insufficient staff.”

This was straightforward.

The intention was for Zhao Meng to start training some apprentices quickly.

In the kitchen, the biggest fear isn’t the business being good.

It’s having insufficient manpower.

No matter how many orders come in upfront, if the kitchen cannot handle them, it’ll cause problems.

The boss wanted to support newcomers in the kitchen.

And Yao Shi wanted Fu Yu to take independent orders as soon as possible, working alongside Zhao Meng.

Zhao Meng understood and nodded, ”Alright, I got it.”

He understood Fu Yu’s talent better than anyone.

This kid had already established a solid foundation, lacking only practice opportunities.

Seeing this, Yao Shi smiled with relief.

He knew when Zhao Meng heard about this, he would be quite pleased too.

Fu Yu had already showcased some skills in front of him.

This kid truly was talented, and with Zhao Meng as his partner, they’d surely be unstoppable in the future.

And with Fu Yu’s recent promotion, he’s now beginning to develop into a head chef.

It was indeed a good thing.

Once Fu Yu could hold down the fort, Zhao Meng could be transferred to the music restaurant to help manage the back kitchen.

If the performance evaluation goes well at Qianlima, it could later be applied to the music restaurant as well.

Then, with Zhang Zhen and Zhao Meng leading a group each, there’d be no need to split order-taking; two groups could work together, but their enthusiasm would still need to be stimulated.

Thinking of this, Yao Shi couldn’t help but look forward to it.

However, the choice of assistant chef to be assigned to Fu Yu needed to be considered carefully.

After all, if Zhao Meng leaves in the future, this person would become Fu Yu’s right-hand person.

This matter requires seriousness!

Who would be suitable from the kitchen?

It seems it needs to be planned long-term.
