Chapter 76: Family’s Secret Recipe - Sausage ( 2 )

When he heard his wife’s words, Fu Chen’an smiled and said, ”Then let’s try to make it. It will be great if we succeed, but if we fail, it’s also no problem.”

”Okay,” Yao Zhi nodded.

After he finished the honey water, Fu Chen’an went to the kitchen with his wife. Holding a knife, he followed his wife’s instructions to cut the pork into smaller pieces. The meat was a mix of 70% lean meat and 30% fat.

While he was busy in the backyard, Yao Zhi was browsing the System shop in the kitchen. To make Lap Cheong, she needed natural hog or sheep casings.

These casings were mostly made from the small or large intestines of hogs.

As for sheep, they only used the small intestines for a slender and more delicate feel. The size of the end product would also be smaller than using hog casings.

Since her husband had a big appetite, Yao Zhi chose the hog casings. They were more durable and had a good balance of strength and tenderness. The most important thing was that they provided the desirable ’snap’ feeling when bitten.

The sausage casing was sold in bulk and cost 1 point for 3 meters. For natural salted casings, the price was low. Since she planned to make around 160 kilograms of pork, she bought 300 meters of sausage casings, costing her 100 points.

After she bought the casings, she washed the salt off with water. She actually needed to do it using running water to ensure the inside was also cleaned, but she didn’t have any running water here besides the hose connected to her System’s river.

She peeked outside and saw that her husband was busy chopping the meat with his back facing her.

To avoid him, she brought the sausage casings behind the kitchen and took out the hose from the System Farmland. Using it, she managed to rinse the casings in less than twenty minutes.

After she was done, she filled a large basin with river water, added some hot water to make the temperature lukewarm, and then added a little bit of Baijiu.

While the casings were soaking, she went to prepare the seasonings. She didn’t know if her husband could handle spicy food, so she used common seasonings and chose a safe flavor.

She opened the System shop and bought 400 grams of curing salt. Unlike cooking salt, curing salt was more expensive. It costs 4 coins for 100 grams, totaling 16 points.

Besides salt, she also bought 12 kilograms of sugar, costing her 240 points. Since her husband seemed to have a fondness for sweet food and drinks, she added more than needed.

She bought 3 kilograms of cooking salt, costing her 60 points; 4 liters of light soy sauce, costing her 12 points; 1 kilogram of red yeast rice powder to add more color, costing her 5 points; and 5 liters of liquor made from fermented sorghum infused with rose leaves, costing her 250 points.

After she bought everything, she poured them into bowls, jars, and waterskins. Then she added 160 grams of white pepper. She still had a lot of white pepper, so she didn’t need to buy it from the System shop.

As for the sausage filler, she bought 2 manual fillers made of bamboo from the System shop for 2 points each.

When she came out of the kitchen with the seasonings and sausage fillers, she saw that her husband was almost done with the pork mixture.

The amount of pork was so much that they had to use a wooden tub instead of a basin. Seeing his wife coming, Fu Chen’an wiped the sweat from his forehead and said, ”Wife, I’m almost done.”

Yao Zhi nodded and waited on the side. When he was finally done, she said, ”Husband, go drink some water first and take a rest. I need to season the pork mixture first.”

Fu Chen’an was tired and didn’t refuse. While he was resting, Yao Zhi rolled up her sleeves and tied them with a long piece of fabric.

Afterward, she washed her hands and added all the seasonings, including the liquor, into the pork mixture. She massaged the pork mixture using her hands until all the seasonings were thoroughly combined.

Normally, she needed to let the pork mixture marinate for a few hours or overnight. But with the current temperature, she was worried that the meat would spoil. So, when her husband was not looking, she added 10 drops of spiritual spring water.

Soon after adding the spring water, she mixed the pork mixture for five more minutes. When she was done, she wiped the sweat from her forehead and said, ”Husband, the mixture is ready. Come and help me pack it.”

Hearing this, Fu Chen’an walked over and sat beside her. He looked at the bamboo tube given by his wife and asked, ”Wife, what is it?”

”This is called a sausage filler. We use this to fill the casing made from pig intestines with the pork mixture. This is how you do it,” Yao Zhi explained as she demonstrated.

When she was done, she suddenly remembered that she hadn’t prepared twine and needles. She stood up and said, ”Wait for a moment, I need to get something.”

While waiting, Fu Chen’an tried filling the casing. Using the bamboo tube, it was easy, and in just a few tries, he had already mastered the technique.

In the kitchen, Yao Zhi quickly opened her System shop and bought a pack of embroidery needles for 1 point. One pack had a total of 20 needles. She only needed 2 and stored the rest in her System storage.

Then she bought 20 meters of twine for 1 point. Before leaving the kitchen, she grabbed a small knife.

When she returned, she saw that her husband had stuffed quite a lot of sausage. She checked the firmness and said, ”Husband, if you like it firmer, you have to stuff more.”

Fu Chen’an didn’t know what the sausage tasted like, so he didn’t stuff it too firmly, following his wife’s example.
